Because soft-ripened cheeses mature from the outside to the inside, it makes no sense to check maturity by thumb pressure. Even if it gives under pressure, the “core” can still be solid. CAMBOZOLA is so pre-matured in the ripening rooms that you can enjoy it immediately.
As we all know, you don’t get older – you become more mature. The same applies to soft cheeses. Soft-ripened cheese specialities such as CAMBOZOLA acquire even more character as they mature. Those who like intense flavor can tell you: It’s worth waiting.
The rind of our soft-ripened cheese products is edible. It is the result of natural ripening and forms another refined facet of the harmonious taste composition of CAMBOZOLA.
Soft-ripened cheese should be kept cool, but not too cold. The ideal place for CAMBOZOLA soft-ripened cheese is the vegetable compartment in your refrigerator. Do not use airtight containers (e.g. plastic containers) for storage. The cheese must be able to breathe in order to develop its aroma. It is best to use cheese paper like at the cheese counter in your supermarket.
Good things take time. Take CAMBOZOLA soft-ripened cheese out of the fridge at least 30 minutes before serving, and let it rest unpacked so that the aroma, taste, and consistency can fully unfold.
A seasonal experience: In autumn, you can combine our CAMBOZOLA with fresh mushroom dishes. Chanterelles, porcini mushrooms, or the classic button mushroom are an excellent match.
The softer the cheese, the more difficult it is to cut. For smaller pieces of cheese and especially for cutting soft-ripened cheese, a two-pronged knife with perforations in the blade is the best choice. The serrated edge and the perforation ensure that the cheese does not stick to the blade. The pieces can then be placed directly on the serving plate with the two-pronged tip.
Cheese platters are always popular. Whether in a convivial atmosphere or a romantic rendezvous. The following applies to a successful compilation: You eat with your eyes! So use a naturally beautifully grained wooden serving tray and some fruit or nuts for garnishing. You should calculate approx. 170 g of cheese per person if the plate is intended as a main course and approx. 80 g per person if it is served as a dessert.
Serve seasonal fruits (e.g. figs, pears, or grapes) or nuts with soft-ripened cheeses.
Milk and dairy products provide important nutrients such as protein, minerals, and vitamins. However, lactose (milk sugar) also contained in milk is no longer tolerated by some people after infancy. People with lactose intolerance are not able to break down lactose into its individual components:
A deficiency in the enzyme lactase reduces the ability to break down milk sugar. Lactose intolerance is often manifested as discomfort in the gastrointestinal tract.
